1kg cauliflower florets, cooked and drained extremely well
2 tbsp. mayonnaise
2 tbsp. matzo meal
salt and pepper to taste
panko crumbs for topping
Preheat oven to 175c.
Mash cauliflower and mix with eggs, mayo, matzo meal and seasonings.
Sprinkle with panko crumbs and bake in an oven-to-table dish for approximately 45 minutes.
