Microwave Peanut Brittle

1 cup granulated sugar
½ cup corn syrup (Karo)
1 cup shelled and peeled, salted dry roasted peanuts
1 tsp. vanilla extract
1 tsp. margarine or butter
1 tsp. baking soda

Method

Mix sugar and corn syrup well in an 8-cup microwavable bowl. Cook on high 3 ½ minutes. Stir after first 2 minutes.

Add nuts and stir again. Cook a further 4 minutes on high, stirrings at 2 minute intervals.

Add vanilla and margarine. Stir and return to microwave for another 1 minutes.

Remove, stir in baking soda. MIXTURE WILL FOAM!

Quickly spread onto a lightly greased cookie sheet.

Refrigerate for 20 minutes. Break into bite sized pieces.

Makes a great little sweet gift or quick and easy treat!
