1 cup oat bran
1 tbsp. baking powder
¾ tsp. cinnamon
¼ tsp. ground nutmeg
1 cup oats
1 cup milk or non-dairy alternative
1 egg, beaten
2 tbsp. vegetable oil
¼ cup molasses
1 cup combination of raisins, dried cranberries, nuts, coconut flakes, etc.
Preheat oven to 220c.
Mix dry ingredients together. Add milk, egg, oil and molasses. Mix well. Fold in nuts and fruit.
Bake 15-18 minutes or so. Muffins test done when toothpick inserted in centre comes out clean (a few light crumbs clinging is okay.
Allow to cool for a while in the pan and then remove to baking sheet.
