Rise and Shine Muffins

2 cups plain flour -OR- 1 1/2 cups wholemeal flour + 1/2 cup white flour
1 ¼ cups granulated sugar
2 tsp. baking soda
2 tsp. ground cinnamon
½ tsp. salt
1 apple, peeled and chopped or grated
½ cup crushed pineapple, drained (optional)
**if omitting pineapple, add 2 more apples, grated
2 cups grated carrots
½ cup chopped dates or raisins of choice
1/2 cup mixed seeds (pumpkin, sunflower, etc.) – optional
½ cup chopped nuts
½ cup desiccated coconut
½ cup chocolate chips (optional)
2 eggs
3/4 cup vegetable oil
1 ½ tsp. vanilla extract


Preheat oven to 180c.

Mix the first 12 ingredients together.

Add remaining 3 ingredients. Combine well.

Using greased muffin cups or paper lined tins, fill ¾ full of batter.

Bake for 20-25 minutes.

Contributor’s note: Tester inserted in centre should come out clean, though if a few moist crumbs cling to it, this is not unusual. Just give it another minute or so if you feel it necessary,.
